Preheat the oven to 200℃.
Fry the onion and chilli's in the butter until golden.
Add the Tex-Mex Spice Blend and fry for a bit longer.
Set aside to cool.
Mix all the Bacon Wrapped Meatloaf ingredients in a bowl.
Add the onion / spice mixture and mix thoroughly.
Form into a loaf and place in a butter greased baking dish.
Layer the bacon over the top.
Bake for 45 minutes. (if the bacon gets too crispy before the meat is done, cover in aluminium foil and reduce the heat slightly)
Save the juices and mix them in a pot with some double cream and tamari. Simmer until it has the right consistency.
Serve with Cauliflower Rice or vegetables of your choice.
