Tex-Mex Bacon Wrapped Meatloaf
Ingredients
Tex-Mex Spice Blend
- 1 tsp chilli powder
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp pink Himalayan salt
- ⅛ tsp cayenne pepper (add more if you like heat)
Bacon Wrapped Meatloaf
- 1 medium onion (diced)
- 2 medium hot chilli's (sliced)
- 2 Tbsp butter
- ½ cup double cream
- ½ cup gouda cheese (grated)
- 500 grams beef mince (grass fed free range)
- 1 large egg
- 1 Tbsp dried oregano
- 1 tsp pink Himalayan salt
- ½ tsp ground black pepper
- 8 slices streaky bacon
Instructions
- Preheat the oven to 200℃.
- Fry the onion and chilli's in the butter until golden.
- Add the Tex-Mex Spice Blend and fry for a bit longer.
- Set aside to cool.
- Mix all the Bacon Wrapped Meatloaf ingredients in a bowl.
- Add the onion / spice mixture and mix thoroughly.
- Form into a loaf and place in a butter greased baking dish.
- Layer the bacon over the top.
- Bake for 45 minutes. (if the bacon gets too crispy before the meat is done, cover in aluminium foil and reduce the heat slightly)
- Save the juices and mix them in a pot with some double cream and tamari. Simmer until it has the right consistency.
- Serve with Cauliflower Rice or vegetables of your choice.
